Easy Weeknight Dinners

With baby #3's arrival, I've been going deep in my Pinterest boards looking for some easy dinners to throw back in the rotation. Here are some of my fave recipes that are quick and easy!

Burger Bowls (40aprons.com) - This recipe takes less than 30 minutes, doesn't involve much chopping, and is a low-card (perfect for shedding those pregnancy pounds). The sauce is AMAZING and you literally feel like you're eating a big mac!

Healthy Mexican Casserole (LaughingSpatula.com) - I love a casserole for the ease of cooking and minimal mess! You do have to brown the meat first so double the dishes but it is so quick and easy and tastes even better as a leftover that it is a major win in my book! I'm a wimp with spice so I swap the 1TBS of Chili Powder for 1/2TBS of Chipotle Chili Powder.

15-Minute Mediterranean Pasta (girlgonegourmet.com) - This pasta is one of my top 5 fave meals ever! When we're feeling healthy, I switch up the pasta for Banza pasta and it is still amazing. I throw in some of my fave Costco rotisserie chicken to up the protein!

Sheet Pan Chicken Fajitas (CookingClassy.com) - This recipe requires a little chopping but only 1 pan so it's a win in my book! I adjusted the chili powder to my spice preference and it was delish! We used the meat and veggies in fajitas, over rice, and as a salad topping!

Slow Cooker Cream Cheese Chicken Chili (plainchicken.com) - Now that the weather is getting colder, I'm breaking out the slow cooker again! This chicken chili isn't the healthiest dish but is delicious! Throw it in the crockpot in the morning and you're good to go!
