This year, I made a goal to cook at least 2 homemade dinners per week since my go-to's have always been Uber Eats, Trader Joe's frozen meals, and pizza. 2 dinners per week felt like an attainable goal and so far I've stuck to it! I love this Meal Planner Grocery List for prepping each week! Here are a few of the recipes that I love that are easy to make and delish!
One Pan Italian Quinoa Skillet - I stumbled on this recipe in January and have made it every week since. My husband loves it too and it's even better as leftovers. I am not a big fan of turkey so I use regular Jimmy Dean Italian Sausage and it tastes amazing! I also add a little Italian season and more cheese than the recipe calls for because you can never have enough cheese in my opinion.

Sheet Pan Greek Chicken - I've made this one-pan dish (I'm a HUGE fan of one-dish meals...less mess and less steps!) a few times and have tweaked it each time. I added summer squash, sweet potatoes, chickpeas, and kalamata olives and it was AMAZING and super healthy. We get 4 servings out of this dish so it's another great one for leftovers!

Mexican Quinoa - Another one-pan dish that is quick and easy to make! My husband believes no meal is complete without meat so I make some taco meat (ughhh dirtying up another pan!) and we use the quinoa as the base for a burrito bowl and add cheese, sour cream, and salsa!

Greek Chickpea Salad - This salad is so light and makes a great lunch too! We add rotisserie chicken for some extra protein! If you don't like arugala, spinach is a good substitute!

Slow Cooker Meditteranean Chicken - I haven't jumped on the Instant Pot bandwagon yet so I'm still a big fan of a classic slow cooker dish! This chicken dish is so good served with orzo or mashed potatoes for a super filling meal.
